The Chef's In the House: Baker Rui's Brownie Cookies

Zirui Chong, also known as Baker Rui (Instagram: bakerrui), will guide us through baking brownie cookies in the next installment of our The Chef's in the House series.

Ingredients (approximately 30 cookies):
225g Dark Chocolate (Cadbury 70% but you can always replace with something less dark or darker)
65g butter
100g flour (sieved)
1 teaspoon baking powder
Pinch of salt
2 eggs
70-80g white sugar
70-80g brown sugar

Equipment:
hand/stand mixer
baking sheet
oven

Method:
1. Melt 225g of dark chocolate and 65g butter in the microwave. Every 15-20 seconds, stir the chocolate mixture
2. In another bowl, mix 100g sieved flour, 1 tspn baking powder, and a literal pinch of salt. Set aside 
3. Mix 70g of white sugar, 70g brown sugar, and 2 eggs in a bowl. Mix with hand mixer for a bit
4. Pour in chocolate butter mix and mix more
5. Slowly add in flour mix, and continue stirring
6. Freeze for 20 minutes or refrigerate for 2-3 hours until it’s less sticky 
7. Preheat oven to 170oC (less for bx’s oven which is Super hot) (200 if convection oven)
8. Scoop of dough mix on to a baking pan. Each ball can be 20g. Press top to make it flattish. Space out. Do this right after dough gets out of fridge else the mixture gets all sticky again 
9. Pop into oven for 10 minutes or when the top of some of the cookies have cracked, whichever comes first. Pull out early if needed because the chewy deliciousness is the best part of the recipe
10. Sprinkle sea salt and serve
